Hi! Brand new user, here. Just successfully sent my first batch of emails from Outlook to Salesforce. Win! Now a question: Is there a need/reason to retain emails in Outlook once they've been sent to Salesforce? I'm reluctant to hit delete in Outlook.

Oh gotcha. I keep both so that I have a backup. If I can't access one, I have a backup plan. On the other side of the coin, if someone consolodates data in Salesforce, most of ours are by tasks (even though they get archived which is a long story), so it's better to have a backup.
