We want Sales Users to access Events and Tasks from their phone, and receive notifications for Events and Tasks as well. We don't want them to have access to any other information when not on-site.
Can we do this? Can the Mobile App be modified based on Profile?

I don't think the current version of the mobile app can do this but when Lightning for Mobile releases later in the year this should be possible then:
