I currently have a Long Text Area(5000) field in a custom object with around 6,000 records. If I wanted to to increase the size of this field to a Long Text Area(10000) field, will this delete any data or cause the field to be corrupted?

Increasing the field size will not have any effect.
Its the other way where you might have some problems i.e reducing the field size.
