Is there a way to highlight certain fields, whether it's an asterisk, changing the color, etc?
Ideally I'd like to have those fields on the lead convert page, but that can't be done from what I understand.

There is not. Best recommendation is to use the pop-up help questions a lot, and then put good thought into how you arrange the page layout. Generally, grouping the "important" fields to the top and to the right is a good idea. Also, get rid of fields that really aren't used or important. Every field carries a cost (to the user experience).
