I was thinking I would need to create a date field for each interaction and then another field to identify the most recent date, but I can't do a RUS from contact.
Does anyone have any suggestions of what I can use instead?

Thanks for your replies. I've tried Rollup Helper but it won't roll up from Contact to Opportunity.
I need this for data cleansing as we need to verify all contacts that haven't had any kind of interaction in the last 2 years. I don't know how I'll do it using Process Builder so I think it's going to have to be a combination of lots of reports.
Oh well, it keeps me busy I suppose!
