Hi Jen,
Lookups just link two objects via a reference field. In order to remove the relationship, you just need to right click and delete the field. If you are having trouble in the schema builder you can also go to the object by clicking the gear in the upper right hand corner and selecting view object. From there you will see a list of fields and you can select delete there.
