We are currently using the Standard text fields for our Billing Address and Shipping Address fields. We are planning to enable the State and Country/Territory Picklists. Are these the only fields available when adding State/Country and Territories?
Once we have configured our State, Countries/Territories, Scanned and Converted identified data, will the Country and State Text fields we are currently using automatically become Picklists? And will the Country Picklist control the State Picklist? Will this happen for both Billing and Shipping Address fields?

All of the address standard fields in: leads, accounts and contacts will convert to picklist. There will be also a field for the code like CA for Canada and a text field version as well.
Only the picklist version is available to the user in the page. You can access the rest in reports.
And yes, the state will depend on the country.
By default salesforce already setup 150+ countries and some of them already have the state configured like Canada, USA, Mexico and Italy. You can configure the rest If need it
