I had a contact call me and ask why they werent receiving my marketing emails.  I let them know that they had "opt'd out" of receiving our emails a while back.  They then asked me to put them back on our email list. 

 

When editting the contact in salesforce, the "email opt out" check box does not allow for the change once you click save...

 

Does anyone know how to get around this?

    Sounds like the field isn't editable in Salesforce, or is possibly read-only because it could be managed by a connected system.  I would check with an admin because you there may be a marketing automation platform or some other mechanism managing opt out status and there may be another process in your business to opt someone back in.
