Example of purpose would be changing the header image based on the contact's or sender's information. So if some one from the "widget" department uses the html template the header will automatically use a image with a widget in it.
Or if our database has the region the contact is in they might get an image related to their region.

Although they're probably not as easy to use as those of Constant Contact, you can write Visualforce Email Templates, like this sample. They give you pretty much unlimited power to customize the email.
