Picklist fields can be edited from the Setup menu under the object they are associated with. From your screenshot it looks like the 'Role' field is associated with the Relationship object. So to edit this field go to Setup->Create->Objects->select the Relationship object->find the Role field under the custom fields list and click it's name->you can then add, delete or edit any of the picklist values.
