When creating a case or opportunity, is there a way to have the person creating it automatically set up to follow it by default?

Ask your users to go to setup->personal setup->my chatter settings->my feeds-> and set "Automatically follow records that I create"

By that they will follow all records they create.

If that is not enough, search for appexchange. There are some free apps that allow you to determine auto (de)follow rules.
