Report requirement
We have salesman that pitch for business and every Brief/Pitch is recorded on Saleforce where the To Stage and From Stage are updated.
What my manager wants to know for each sales person is what Brief/Pitch actually lead to a Booking and the length of days between each stage.
Essentially a full breakdown by sales person, date range, Stages, amounts.

Hi, it sounds like you need to create an Opportunity History report.
Go into the reports section, new report, Opportuntity section, opportunity history. Have a play around in there and see if you can come up with something :)
