Is there a way to globally edit Field Level Security? Looks like via a change set push to PRD, many of the additions/chanes are set to hidden.
If not, is there a way to globally (across all object) identify which fields are hidden via FLS?

This will not get you 100% of the way there, but look at Setup>Admin>Security Controls>Field Accessiblity. See if that helps.
I have also used the Force.com IDE to download the XML for profiles and then imported into Excel to get tabular format.
It will be a bit of work.
Updating the FLS in batch is another matter.
