I have a Mester Detail relationship set up between the custom objects Doctor and Patient (one patient can have ONE doctor, one doctor can have many patients). On the Patient record, once I select a Physician, I am unable to edit the physician on the patient. I understand I have to have an associated parent to the child, but can I never change the parent?

There is an option for RE-PARENTING when you create master detail.
Note: "By default, records can’t be reparented in master-detail relationships. Administrators can, however, allow child records in master-detail relationships on custom objects to be reparented to different parent records by selecting the Allow reparenting option in the master-detail relationship definition."
