Hi Noel.
After you've logged into sfdc, click on your name in the upper-right hand corner of the application. Then click Setup...App Setup...Customize...Accounts...Fields
You'll see a list of Account Standard fields. To change the values of the Type and Industry fields, click on Type and Industy links. Clcking on the "Edit" link only allows you to add help text.
If you have Enterprise or Unlimited edition, I recommend making a Sandbox (a duplicate) of your salesforce. Setup...Administration Setup...Data Management...Sandbox
It will give you a place to learn and play with the application before making changes to your Production org. If you have Professional edition, create a free Developeraccount instead.
