We're using the Professional Edition. I attempted to add the Email Opt-Out checkbox to the Contacts page layout, but when I look at a Contact it does not appear. How do I make this field visible?

Here is the path to find this feature. You need to have administor right to do the modification. Setting->Contact->Fields->Email Opt Out->Sef Field-Level Security.
