I know that there is the facility to use a tracking and monitoring solution on mass e-mails and campaign e-mails. I just wondered if you could let me know if there is a similar facility available for e-mails which are sent to a single person.

I believe it works for all HTML emails that are sent from the system. It's got to be an HTML email, otherwise it can't be tracked.
