I seem to remember that, at one time, there was a pilot or roadmap for being able to override individual fields with a Lightning Component (called extensions, or something like that?). Is that something that is being considered?

Yes, it was called Field Extensions. I'm pretty certain that @Andrew Cafourek still has this on his roadmap, but it is not a near term priority.
