I'd install the Agile Accelerator and I'm a little confused about how to use it. For example, how do I create a new Kanban Board? In the app there is only one board named "Sample", it would be nice if I could create one for each project we have here in the company.

Every team has their own Kanban board. So if you create a new team, add yourself as a member and then go to the Kanban Board you will be prompted which board you would like to see. More information in the getting started guide:
