There is a documented behavior, that date fields in related lists do not render a leading "0" (zero) in certain locales. For example a German date 01.11.2025 (dd.mm.yyyy) is rendered as "01.11.2025" in the detail pane of a record, but "1.11.2025" within a related list.
A bug notice was commented with "working as expected" in 2022 (W-12218758):

On our FSC developer org, which installed the preview "Winter '26" we noticed that this behavior seems to have changed. That would be really great if this was an official feature of the coming release. But I didn't find any hint in the release notes.
Maybe you'd give it a try if you're affected. I'd also be interested to know if there's any official confirmation on this.
