If you had a small org that never needed to scale I guess you could do that. The majority of people use it with general inboxes. Many use an outlook plugin or the bcc functionality https://www.outreach.io/articles/bcc-to-salesforce-breakdown-how-to-setup-and-drawbacks for personal inboxes.
