The one other question I had was when I did a test of the dynamic sender profile the email came through with a "sent via". Is there a way to remove that and show the email coming directly from the designated FromEmail?

If you're getting blocked absolutely. You should only send using domains that have been authenticated i.e. SAP domain, or email addresses that you've verified through the from addresses verification tool. Anything else will appear as a spoof to a receiving client.
