Hi Jack.

One way to stop spam emails coming in via web-to-lead is to set up validation rule ( Setup | Leads | Validation Rules

) to check for specific keywords which you can identify from the spam that came through -i.e marketing, etc. OR to check if any fields are blank/empty.
