I peeked into chatter for the first time only do discover that salesforce had been posting my client info along with all my updating activity on the Chatter Posts since October !!!!!!

Do you mean Feed Tracking?

Feed Tracking is per object per field. You can turn this on/off via the Setup -> Feed Tracking menu option.
