I am new to marketing cloud, one of our clients would like to have reports that shows the click/through open rate of emails sent out for campaigns via if possible a csv file.
Is there a possibility of doing this per data extension/ segment / email sent on each journey builder?

Marketing Cloud has extensive reporting functionality: https://help.salesforce.com/articleView?id=sf.mc_dat_reports_overview.htm&type=5 E.g. the report for campaigns:
