Currently I connect C&P with our Salesforce instance using my email address which I know isn't ideal. I don't have any spare licenses to dedicate solely for integrations and was wondering if the
Integration, Insights user account would work.

The user you are referring to, based on our understanding, has only read access to standard objects. This simply causes issues with creating contact, opportunity, etc.
Why not use the standard
Minimum Access – API Only Integrations profile? That works..
