I have a requirement from our Security and Cyber Team to ensure that Augit level logging is switch on to all our corporate applications and to ensure that a certain level of data is retained.
I have taken an extract of the Setup Audit Trail but the data held is limited. Is it possible to add to the columns of data with in the Audit trail? Are there any other log files that I should be focusing on?

It really depends on what you want to track.
Set up Audit Trail tracks major changes
For User login History each user shows that in their user page
Changes to Fields or tracking of fields can be set on an Object in Object Manager- Field History Tracking
On every Object Tab, you can see Activity Tracking for every task created or updated
You can go to Set Up and search for Feed Tracking and check enable feed tracking. This will enable users to follow records and track changes to it
Then there are Groups and chatter that can inform you of posts on different feeds
