There is currently no API to fetch the contents of the Canvas. There may be a workaround, but native API reading of the canvas will be added at a later date. You can view the current list of available APIs at https://api.slack.com/methods

@Charles Hack https://trailblazers.salesforce.com/profileView?u=005KX000003eAblYAE , we were able to fetch Canvas content using the url_private_download property that's returned from the files.info method.
