I looked at the documentation, but my Salesforce does not have the fields named as an option to "make visible" I am wondering if I am working off an old NPSP version and how do I address that?

Are you clicking the 'Login' link to the left of your Sandbox entry in Setup? If your password has changed in production since that Sandbox was set up, it won't be updated in the Sandbox. You can try clicking the Forget Password link on the Sandbox login screen.
