I have a database count of products per client email( id ) table.
There are three types of clients. I know the exact clients for the first category and second category - based on the clients ids/emails. The third category should be total of id-s minus the ones in the first category and the second one. What is the best way to create these 3 categories in a table?
Group, sets, calculated field....?

As a calculated field ? I would do it this way ...
IF <condition goes here> THEN 'Cat A'
ELSEIF <condition goes here> THEN 'Cat B'
ELSE 'Cat C'
END
The condition can be as long and complex as you need, you can use AND and OR as required, ultimately if the Cat A condition isn't a match, then try Cat B condition and when that's not a match then it must be Cat C
