I have created multiple Record Types for my Opportunities; however, when I go into my Opportunities and select [Change Record Type] I only have a single option available. Any idea what I could be doing wrong?

Can you please ensure that your profile has access to the record types by going to setup --> profiles --> Object settings --> Opportunities --> Edit --> assign the applicable record types
