On Lead conversion I would like to map the value in the standard Lead Description field to the standard Opportunity Description field. It doesn't seem to be available for mapping.
I was considering adding a new Opportunity field called Lead Description in as a formula field to just display the value from the Description field on the Lead so users can have it as a reference but am unsure how to proceed writing a formula as it doesn't seem to work. What is the best way forward here?

The Lead Convert Mapping of Standard fields is "hard wired" and can't be over-ridden or modified.
The Description field is also Long Text Area(32000), so that rules out using a custom Formula Field. You're probably gonna need a Flow or Custom Code
