We are looking to update (or set as default) the assigned to field on a task to equal the related Lead owner, we are struggling on if we should start with building a lead flow or task flow... Can someone please give us some insight on how we could accomplish this?

The easiest way to create the Task related to the Lead is to create a quick action "Create Record" > Task. This will automatically link the Lead to the Task (with the field "Related To").

Next, you need to create predefined field value for field Assigned To
You need to pull this new action to the Lead Page Layout, where it will be visible as a button. No need to create flow at all.
