We have requirement - 1)To add Product to Opportunity without 'Price' but with 'Percentage' , can we remove/hide sales and list price from Opp Product. 2) While adding Product to Opp , user will add Percentage value manually against each Product but the sum of all percentage should have to be 100 ,can we add validation rule in Opp Product? 3) we need to edit Opportunity amount field after adding Product to Opportunity,can we unlock amount field.

The price is a required field. it is how the tool knows to calculate the total on the opp. its the sum of all the lines (Price x Quantity). You could just enter 1 and make a new field to track the percentage.
