Why is my Guest User suddenly assigning existing accounts when it typically only assigns newly created accounts?

Beginning on 5/3/22, our Guest User started assigning account owners for existing records as opposed to only assigning account owners to brand-new records. How do we prevent the Guest User from updating the Account Owner associated with an existing record?
