Hello, One of our service provider supports both OIDC and SAML
Which one should we pick? is one better over the other? what use case would be determining factor?
Hearing about SAML since very long so may be its old

Is it not the other way around? If anything, SAML would be more likely to perform authorisation (as a protocol) - though I'm not sure Salesforce makes any use of that, seeing as it has its own authorisation engine in the form of profiles and permission sets.
