I have received a request to deactivate a user urgently which I did and then check his recently activity to see what reports he has exported/downloaded and i he is taking any customer date from salesforce as I am assuming he is moving over to a competitor and has left suddenly. Beside Audit trail which doesnt tell me much, what other salesforce functionality can be leveraged to track his activity over the last few months?

If it is a scheduled report then you should see this recorded in Scheduled Jobs, but if the employee has export access and has written the report and exported the data themselves then there isn't anything OOTB to help you.
Unless you have Salesforce Shield (a paid addon), which may have more data for you.
I recommend you use this as a reason to propose restricing who has the Export Reports permission.
