How do workflows decide the user to whom their actions are attributed?

Users are coming up as having modified Opportunities, but it's clearly off-hours and the modifications weren't actually made by those people. As well, these users are administrators and not people who would work Opportunities. I'm certain that the changes made are workflow changes, but why then would the admins' names display in the Field History?

There is a default Workflow User.  Most often, however, since Workflows only run when a record gets edited, the Workflow is run as the user who caused the edit (even if the edit is as a result of an integration which needs a user credential to connect to Salesforce)
