Hello,
Currently we have a "Plan Date" field which is simply set up as a date field and a specific calendar date must be choosen. Since an activity's date can vary I was wondering if it is possible to create either a date/custom field that indicates that the activity should occur within a specific week. (i.e. instead of "Plan Date: 8/9/2016" give an option to choose "Plan Date: 8/14/2016-8/20/2016")

Well you can always configure 2 different date fields, Plan Start Date - Plan End Date, and have your validations accodingly.
Date range cannot be configured on a single date field.
