I was wondering if I can change the layout of an email notification recieved once a user taggs me on a chatter post?
the current email doesn't include the case subject and asset, only the case number and the user who have mentioned me on the post.
Please advise

Customizing chatter email notifications is not yet possible as of the moment Corinne. You can vote for this idea (https://success.salesforce.com/ideaView?id=08730000000HA1sAAG) if you wanted to see this functionality in the future release.
