for internal account users how can I add past activity and show email saved?
I can see activity for an opportunity but not for a user?

Hi Paul, I think not in the user page, but you could create a new report with Report Type "Activities with Account", you can filter or group row by Created by or the Assigned fields, don't forget to change the default filters to something like:
Show Me: All Activities
Date: All Time
Show: Open & completed Activities
Show: Task and Events
