I saw there is a way to convert to a specific contact record type. Is there a way to that for opportunities?

Unfortunately there does not appear to a way of doing this right now. It is a great idea though, I could see us using it as well. I found the following idea which is asking for the same thing: https://sites.secure.force.com/success/ideaView?id=08730000000BpKyAAK

Alternatively, if you have a programming background you could override the default lead conversion process and map record types between leads and opportunities.
