But I'm in www.emea.salesforce.com and you cant change the server settings! What to do?

That should make no difference. The way web services work, the app logs in first via www.salesforce.com, and www responds with a pointer to the actual server to use, which in your case is emea.salesforce.com or something. The client will then use the URL it has been pointed to. You should not change the endpoint that Outlook is pointing at.
