Let me lay out a simplified version of the situation for you:
- One type of my organization's opportunities are events
- The value of the opportunity is based on the number of people that show up and purchase our services
- In the absense of a known number, we assume 10% of a company's employees show up for one product
So it would be helpful if this product with 10% of account employees as the quantity was there by default when a new opportunity of this type is created. The salesperson could change this number or add other products if they get better information.

I could do this with a workflow rule right?
Question 2:
I'm on professional edition, so no workflow. Am I out of luck, or is there another way to do this?

ouch! you're in a tough spot without a WFR. You might be able to create a Formula fields, but then you're stuck with how do you get the data from your Formula field into the Line Item Quantity. I dunno if this is doable in PE
