Hello Michele,
You can use the now() function in Compute Expression in Dataflow.
Yuu can add a Formula Field in a Recipe, as explained here:
https://help.salesforce.com/articleView?id=bi_integrate_data_prep_recipe_formula_field.htm&type=5The now() function is not in this list so I suggest it's not possible.
