Our org is still running on NPSP. Where can I find out when we are going to get it so I can prepare the users?

I would laugh (kindly) at anyone who says they are an expert at this point. Industry Cloud has been around for a while but all the partners are scrambling to learn the new cloud and the biggest most important piece isn't release yet (not even to partners).
