I have used to 'User access and permissions assistant' to create permission sets from a bunch of profiles. And now I am looking for a solution to clean the existing profiles from their object, field, app... permissions.

For the object permission I have a solution based on the deactivation of the 'Enhanced profile user interface', going to Salesforce Classic and using a 'check all' chrome add-on. But for the field permissions I do not have a working solution.

Do you have any successful experience?

I really like used VS Code, Find/Replace with REGEX combo to accomplish this.  Just pull your profile and all of your standard/custom object via a package.xml file in workbench.  This will give you your profile in metadata.  Then load the zip file with your profile in VSCode and use the search function with the Regex( aka .* option ).  Now you just need to target the objects fields that you are looking to edit.  If you are removing edit for all fields and all objects you don't even need REGEX, you can just do find and replace using <editable>true</editable> as the find and <editable>false</editable> as the replace which will remove edit from all object <fieldPermissions>.  Then just save your changes, zip your files and use vscode to validate and deploy your changes.  You can superpower this from a find perspective using REGEX, but that is a bigger topic.
