We use Azure AD, and I am looking into SSO for Salesforce and need to see how it can be used in a hybrid deployment so that our employees use SSO, but our contractors will use a direct login. I've heard it's possible, but not sure how to do it. any advice please?

Yes this is possible.
You can restrict employees to only use SSO and contractors to use a Salesforce provider Username and Password.
I believe the setting 'Is Single Sign On User' restricts a user to just use SSO.
