Custom Last Activity Date

I have been struggling with this for a while, but I am trying to write a process that will capture the most recent activity for an account or contact. The Last Activity Date doesn't seem to capture anything email related and only captures "closed" events/tasks. I want to create a field that captures ALL activity. Has anyone written a process for something like this?

    the steps of the flow are the same

     

    You can also look at using a report instead to display the dta so there is no need for automation nor DML
