When a new case comes into a queue, going into the case and assigning the case to myself will:

1) Assign the case to myself

2) Since yesterday it also then created a new task under Feed/ Logged a call task

I've checked Process Builder and it doesn't look like the conditions of the case should make it create a task.

Check your Email-to-Case routing addresses and see if Create Task from Email is enabled.

    Routing Address in Pending State

Typically, this behavior will occur if the Routing Address is still in a 'Pending' state and has not completed the verification process. This can be confirmed under the 'Verification' column in the list view of Routing Addresses.

Automated Case User's profile does not have access to Record Type

This behavior can also occur if your Automated Case User's profile does not have access to the record type set in the Routing Address. You can find your selected Automated Case User under Support Settings. Check the user's profile and ensure that they have access to the selected record type.
